These are some of my favorite meals from the last month or two. It's a shame that I haven't been taking pictures.
Red Beans and Rice - This is a recipe from Cook's Illustrated. Steve is in love with everything Cook's Illustrated because they always outline their method and talk about the process by which they arrived at the recipe in their magazines and cookbooks. I love Cook's Illustrated because their food is delicious. We couldn't find andouille sausage here, so we brought some back from France. Because our French is not so good, I think we bought the wrong kind of sausage but it still turned out delicious.
Sweet potato, apple, and apricot muffins from Leiths Vegetable Bible- I undercooked them, but I still really like the flavor and will try them again.
Carrot souffle - I just made this last night in an attempt to do something interesting with the big bags of carrots in our refrigerator, and it was a surprise hit. I baked it in ramkeins, and it turned out really well. It's very reminiscent of sweet potato casserole, and I might put in slightly less sugar next time.
Baked beans and brown bread - This is a traditional dish from Steve's family. We've eaten it for Saturday night dinner the last couple of weeks and it's so satisfying after a day spent slaving at the allotment. (The link I've provided for the beans isn't the recipe we use, but it's close.)
Whole wheat spaghetti with zucchini and sun-dried tomatoes - This is another Cook's Illustrated recipe. Who knew that toasted pine nuts would be so magical?
Curried butternut squash and peanut butter soup - This is also from Leiths. Best eaten with grilled cheese sandwiches.
Now, strangely, I'm craving Hawaiian haystacks, but we can't find chow mein noodles in any of our local stores.
Any recipe suggestions?

I love it when people put their favorite recipes on their blog so thank you very much.
Can't think of any ideas for chow mein noodles except have your mom pick up a bag at Costco and mail them to you. When I lived in Northern Ireland I would require people visiting me from the States to bring along certain foods that I couldn't get.
I have an excellent one for butter chicken I'll send along.

Yankee Girl--You are wise. I do have friends coming to visit soon. I will charge them chow mein noodles for their accommodation.
KWB--Ooh, do! I almost got some when we went out to eat last week and at the last minute, I chose something else. But I now I think about butter chicken all the time.
