We're Swimming in Vegetables

Yes, we're swimming in them.

Speaking of swimming, I attended my first aqua fit (water aerobics) class last night. Steve and I have passes to the city's leisure program, so we can attend the pools and fitness centers around town, including classes, as often as we like. Water aerobics is my new favorite thing. I went with Mom to her water aerobics class in Tennessee, too. I like it because it's group exercise but no one can see what you're doing. Brilliant. You can be total rubbish at an exercise, and no one knows.

So, anyway. Our vegetables are huge. This is a zucchini we sent home with a friend. I nicked this picture of it that she posted on Facebook.


We have several more zucchini of this size, so I'm desperate for recipes involving zucchini and beets. Tuesday we had borscht with zucchini cheddar bread and zucchini brownies for dinner. I liked the menu so much that we're having it again tonight, I think. The zucchini is totally undetectable in the brownies. Try it. You will love it.

i love water aerobics! i went with my mom all the time when i lived at home after college, and joanna and i went once in provo. no impact, and no sweating. holla!

I tried this raw foods recipe where you use a veggie peeler to make noodle-like strips of zucchini, and then you put salt on them, and they get very soft, like noodles. Then you make a tomato sauce (of garlic, tomatoes, olive oil, jalapeno) and put it on top of the "noodles." It's a very healthy dish, but the zucchini noodles can get very soggy if you don't put them in a colander and let all of the water drain out.

Water aerobics is a favorite for me, too! I still want to become an instructor. But first I would need access to a pool...
