I'll Tell You, Because I Like You

I made the best, easiest, cheapest lunch today and now I will tell you how to do it too.

1.  Slice up the mushrooms remaining from the box you bought last week to use on your pizza, in your salads, and with your fish.  Wonder if these mushroom are still good.  Throw a few away.  Decide that this will be the box of mushrooms final offering to your household and proceed.
2.  Heat some butter in a skillet.  While it's heating up, slice the mushrooms and a tiny bit of onion.  Save the rest of the onion for the curry you'll be making for dinner.  While you're at it, chop up a garlic clove too.
3.  When the butter starts to foam, toss in the onion and mushrooms.  Stir them every 30 seconds or so until they brown up and look nice.  Don't stir too often.  Give them a chance to brown.
4.  While you're giving the mushrooms a chance to brown, pop your bread in the toaster and pull out a plate with a picture of a snowman on it.
5.  When the mushrooms look like they're almost done, toss in the garlic, a little parsley,  and a tablespoon or so of bread crumbs.  Stir and then leave to cook while you butter your toast and put it on the snowman plate.
6.  Take the mushrooms off the heat, season with salt and pepper and a small squeeze of lemon juice, and shovel them onto the buttered toast.
7.  Eat and be amazed at how delicious mushrooms can be (they're not usually high up on my list).  It's especially nice with a glass of milk, some edamame salad, and a pinch of cookie dough.
