Try These Recipes

We have three zucchini plants this year and, not surprisingly, they provide us with far more zucchini than we actually need.  Even after giving bags of them away and eating them in everything we can think of, we have too many.  Fortunately, Steve, in his canning craze, found a great way to preserve them: zucchini pineapple.  You cook up the peeled, chopped zucchini with pineapple juice, lemon juice, and sugar and it actually transforms the zucchini into an entirely passable pineapple substitute.


We bottled it using directions very similar to these

I finally signed up for Pinterest, which has brought a whole new wealth of fattening recipes into my life.  Thank you, Pinterest.  Thank you, Internet.  I will now be a very fat pregnant lady indeed.

The first recipe I tried was this Pull Apart Lemon Coffee Cake.  It tastes like a lemony brioche and it is too good.  It didn't even last 24 hours in our flat.  Steve says the pictures I took of it don't do it justice.  He says it makes the loaf look like an armadillo.  Check out the recipe link if you would like to see it looking delicious.

Remember in Little House when Ma made "apple" pie out of pumpkin?

Tell Steve that I would happily eat that armadillo.

I now have a medical condition that excludes me from partaking. Don't suppose there is a sugar free version. :(

One caveat to that recipe - it's not quite tart enough for me, so I added a bit more lemon juice. Otherwise it does taste JUST like pineapple.

It is at times like these when I am sad that I am now celiac. That pull apart bread looks mighty tasty, and there is no way to get a good GF substitute.

Will have to remember that trick with the zucchini. We shredded ours and froze it. However, that means you have to have freezer space. What else have you been canning?

We've also canned strawberry jam, mustard pickles and green beans with plans to can potatoes this coming week.

We froze a bit of our zucchini but our current freezer is TINY.
