Ugly Pasta Comfort Food

This is my new favorite, go-to comfort food. Several weeks ago I was looking for a way to use up a squash and found a modification for pasta carbonara in Mark Bittman's How to Cook Everthing. Squash or zucchini replaces the bacon, but the recipe keeps the pasta, egg, cheese, and liberal use of pepper. I like bow-tie pasta instead of spaghetti, and I increased the amount of squash in the dish. It is fast, warm, and lovely. Try it!

i could eat zucchini every day and not get sick of it. i love it!

I'll have to try this. Carbonara is also good with mushrooms subbed for the bacon, btw.
