Yesterday was my third Canadian Thanksgiving. We had a very small-scale celebration because of our very small-scale flat. I purchased an itty, bitty turkey piece. It came frozen in a foil tray and could easily have fit into a toaster oven, but it fed us and two guests just fine. We also ate Steve's special Nova Scotian stuffing, mashed potatoes (from our allotment), a butternut squash and parsnip casserole (brought by a friend) and Shaker lemon pie. Shaker lemon pie is one of my very favorite pies. It's made with two whole lemons (peel and all). It gets better the second day, so when I stuck my finger in the pie plate this morning, it filled me up with lots of post-Thanksgiving joy.
I make my pie crusts five at a time and freeze them, so there is now enough dough in the freezer to see us through the rest of the holiday season. In fact, I had so many dough scraps leftover yesterday that we may have pie again tomorrow. Or today.
In addition to Shaker lemon, I adore butternut squash pie and my sister's cranberry crunch pie. Any suggestions for other pies to try?

Not a pie, but I had the most delicious hash at a restaurant this weekend. It was 1/2-inch cubes of butternut squash that were nice and toasty on the outside, mixed with apple slices. It was a warm autumn thing of beauty and deliciousness. Also, the pork loin that I could cut with the side of my fork was divine.
I like your sister's cranberry apple pie. Fond memories!
I love pie and spend much time resisting it. Now I;m hungry... :-)

CSIowa--Mmmm. You can never go wrong with butternut squash. I'm chucking it in a pasta dish tonight.

Breanne--Sadly, I imagine it was somewhere in Iowa, so probably a bit far from you.
Tuscan Moon in Kalona, to be specific. It was the chef's special that night, but I'm sure the regular menu items are also delicious.
