I'm a little freaked out by the iguana recipe from the Cayman Islands. It's just a bit startling to see an iguana lying across a table as an ingredient along with things like celery and onion.
The first direction from the recipe reads, 'The most difficult step in preparing this dish is obviously to catch a
fresh iguana! If you succeed in that, the rest of the recipe will be
rather easy!'

Protein is protein I guess. I still prefer mine to come mostly from the supermarket supplemented by the odd cut of venison.
