True Confessions

  1. I don't really know how to cook chicken.  We don't eat a ton of meat and when we do, we usually throw it in the crockpot or chop it up and put it in a casserole or something, so when a recipe tells me (as the one for dinner tonight is) to season chicken and cook until done, I honestly feel a bit nervous.
  2. I'm not a Downton Abbey fan.  I know I should love it but I don't.  I didn't watch the last few episodes of the first season and I completely skipped the second season and the Christmas special.

Roast chicken just sprinkle salt and pepper into the cavity and on top. Some people will put a bit of oil on the skin before seasoning to help the chicken brown. Then pop into the oven at 350 F until done (When juices run clear).

That is a sad confession about Downton Abbey. I'll admit I love it mostly because I admire the youngest daughter's spunk, think the world of Brendan Coyle, and have a huge crush on Dan Stevens. I can't wait to see him deserve better than that selfish daughter.

And I only know how to boil chicken.

I've just never had the desire to watch Downton Abbey. Not really sure why. It seems to be my kind of show.

Those are good instructions for roast chicken. Last night the recipe was just for pan-fried chicken in some sort of sauce. As I feared, I overcooked it a bit, because I'm not really sure what the right heat level/time are for that (I did medium heat for, apparently, JUST a bit too long).

I enjoyed the first season of Downton Abbey, but.....now they are drawing things out for multiple seasons and going more for soap opera. I am in the middle of the first episode of season 2 and I am not sure whether or not I will finish. I kind of feel like it is a waste of time--that I don't really have.
